A diet rich in vegetables is an important component of a healthy diet. You probably know that. We all do. But who actually gets the CDC's recommended 2.5 cups of vegetables each day?

Believe me. I know: it's difficult to pack in all those vegetables.

So here's an idea. Why not begin your day with a few vegetables on your plate? Eating breakfast is a great way to kickstart a day of smart eating choices, and adding vegetables into the mix shines an even brighter light over your decisions.

Here's a list of vegetables that I love to pair with breakfast foods:

  • Spinach, in egg dishes or served separately, as a soufflĂ©
  • Asparagus
