Cool summer dinner ideas: shrimp salad

It's 93 degrees and the thought of turning on the oven is unbearable.

So what do you cook that is quick, easy, delicious, and healthy?

Last week I made a shrimp salad that was pretty damn good.  Here are some ideas for making a salad that you'll love.  This salad also has an added bonus, as it won't leave your husband asking, "where's the meat?"

Prepare shrimp:

  1. Slice onion
  2. Dice garlic
  3. Add olive oil to skillet on medium high.  Salt and pepper the oil.  Add onion and garlic and saute until clear, about 2 minutes
  4. Add shrimp.  Cook about 2 minutes per side
Prepare salad; to a large bowl add:
  1. Mixed greens
  2. Fresh mint 
  3. Fresh basil
  4. Sugar snap peas, cut on the bias 
  5. Corn cut from one cob (corn can be raw or cooked, whatever you prefer)
  6. Diced, fresh tomatoes
  7. Pumpkin seeds
  8. Goat cheese
Toss salad with balsamic vinaigrette.  Lay still warm, sauteed shrimp on top of greens and serve with your favorite, crusty whole-grain bread.  

That was easy, wasn't it?
