Cool summer dinner ideas: shrimp salad

It's 93 degrees and the thought of turning on the oven is unbearable.
So what do you cook that is quick, easy, delicious, and healthy?
Last week I made a shrimp salad that was pretty damn good. Here are some ideas for making a salad that you'll love. This salad also has an added bonus, as it won't leave your husband asking, "where's the meat?"
- Slice onion
- Dice garlic
- Add olive oil to skillet on medium high. Salt and pepper the oil. Add onion and garlic and saute until clear, about 2 minutes
- Add shrimp. Cook about 2 minutes per side
Prepare salad; to a large bowl add:
- Mixed greens
- Fresh mint
- Fresh basil
- Sugar snap peas, cut on the bias
- Corn cut from one cob (corn can be raw or cooked, whatever you prefer)
- Diced, fresh tomatoes
- Pumpkin seeds
- Goat cheese
Toss salad with balsamic vinaigrette. Lay still warm, sauteed shrimp on top of greens and serve with your favorite, crusty whole-grain bread.
