Easy fig and prosciutto salad

A salad can be an exciting mix of ingredients already in your refrigerator

I love salads.  They not only give you an easy way to throw back a host of vegetables in one sitting, but they also enable you to clean out the refrigerator, which always leaves you with a feeling of accomplishment.

Last night I went foraging in my refrigerator for ingredients to create a yummy salad to complement my spaghetti and meatball dinner.  The resulting dish, if I do say so myself, was delicious.  Here's what I put into it:

Fig and prosciutto salad:

  • Cleaned baby spinach
  • Pumpkin seeds
  • Chopped, dried figs
  • Quinoa, sprinkled on top
  • Feta cheese
  • Prosciutto
  • A drizzle of olive oil and a pinch of sea salt
It might have taken me 5 minutes to make this salad.  Easy and delicious.  Since I'm a perennially lazy chef, that works just fine, thank you very much.
