The lazy cook's orange and feta salad

I like to cook, and people say I'm a pretty good at it, but I'm as lazy as they come.  If there is a short cut, I will take it.  If I can avoid a recipe, I will.  And if a dish takes longer than 20 minutes, I don't make it.

Don't get me wrong.  I have great respect for artisan dishes made by skilled chefs, and I love eating them.  But that kind of cooking is out of my realm.  I simply don't have the expertise, time, or patience for such complex dishes.

So I have fun and do what I can.  Sometimes it works.  Sometimes it doesn't.

A couple of weeks ago, I got inspired by a recipe in the weekend section of the Wall Street Journal.  The recipe was created by Restaurant owner Matt Dillon and is described as "easy enough," which for a lazy cook like me, means entirely too time consuming.  So I created a version of it I thought I'd share with you, as I assume you are nearly as lazy as I am.

The finished product took ten minutes, an acceptable amount of time to construct a salad, in my opinion.  It is delicious.  Is it as good as Mr. Dillon's?  Of course not.  In fact, there is a good chance that Mr. Dillon would not be amused by the way I've butchered his recipe.

But everyone at my table ate it.  With compliments.  Here's the lazy girl's delicious orange and feta salad:

  • Slice navel oranges lengthwise and arrange on salad plates.  (4 circles per plate)
  • In a salad bowl combine lettuce, chopped almonds, and feta cheese
  • Pour some red wine vinaigrette in a bowl.  Add red pepper flakes and stir
  • Toss salad with vinaigrette and arrange on top of oranges
